Yesterday, we took our annual trip down to the Hatch Chile Festival in Hatch, NM. We literally drive three hours one way to buy a 40 lb bag of chile, watch them roast it, and then drive it back, but it is so worth it. Six hours on the road and 15 minutes there!
In the evening, we seeded and peeled all 40 lbs, and we will begin packaging them this week. I am going to freeze some of them and can some of the others.
A side note: we drove most of the way down there with the windows down. My left arm is sunburned and my right arm is not.
